Pearl Morissette - 2019 Irrévérence
The third vintage of one of our deepest loves as of late. It's yet again full of surprises and very distinct from its predecessor. The perfume floats out of the glass with freshness, purity and a dewy floral quality. The palate flows in unexpected ways - caressing yet unrelenting; lively, yet smooth. It's a gentle, tender wine, but full of invigorating energy nonetheless. Exceptionally dynamic with a wide variety of foods, it has the "usual" Irrévérence signature of unusual flavor harmonies we are more than thrilled to keep discovering each vintage.
Vinification & Élevage:
2019 Irrévérence is a blend of Riesling from Vigneto vineyard (48.8%), Gewürztraminer from Knizat vineyard in NOTL (33.6%), Chardonnay from Redfoot vineyard in Lincoln Lakeshore (16.5%) and Pinot Gris from Redfoot vineyard (1.1%). The fruit was respectively picked on October 26th, October 10th, and September 29th. The Chardonnay was fermented and aged in foudres, the Riesling in foudre and stainless steel barrel. A portion of the Gewurztraminer was fermented on skins in qvevri for a total of 6 months, while the rest fermented to complete dryness in a combination of foudre and concrete egg (alongside the PG).
The wines aged separately in their fermentation vessels on primary lees for 12 months, before being blended for an additional 12 months of aging in a combination of concrete and foudres.
