Redtail Vineyards - 2021 Pinot Gris
Hand harvested and crushed and destemmed, cold soak on skins for 24 hours for phenolic extraction and flavour. Fermented in 100 % stainless steel at 13 degrees Celsius for 4 weeks total. The wine was fermented dry and put through malo-lactic fermentation to soften the natural acidity. Bottled under screw cap to preserve fruit intensity and freshness. This fresh, unoaked Pinot Gris will pair with a variety of foods and also be a delight to be consumed on its own. Produced in a dry style, perfect for the spring and summer months.
