This coffee is the result of serious experimentation and a whole lot of family collaboration. Grown at Finca Las Flores in Huila, Colombia, this Sidra Bourbon is the work of Johan Vergara—one of three brothers helping run the farm. Johan’s the fermentation mastermind, drawing on years of experience and innovation to create processes that unlock expressive, fruit-forward profiles. And this one’s a beauty.

The process? A little wild (in the best way). The coffee cherries are oxidized, fermented twice anaerobically, washed with warm water in a thermal shock, then slowly dried on raised beds. It’s meticulous, multi-step, and fine-tuned to coax out every layer of flavour. What you get in the cup: jasmine, ripe peach, and a silky, balanced sweetness that rounds it all out.

The Vergara family has been growing coffee in Huila since 1990, and today Las Flores is part of a collective of five farms working together to push the boundaries of quality. With over 90,000 coffee trees and some of Colombia’s most exciting varietals, this is a farm to watch—and a cup worth savouring.
