Pearl Morissette - 2018 Irrévérence
The second vintage of our Irrévérence is just as mercurial as the previous one, but still more textured. A blend of Riesling, Chardonnay and Gewürztraminer, that was also graced by 30% noble rot in the Gewurtz portion, this is a completely dry wine that has stolen our hearts and twisted our minds in our exploration of skin-fermentation. A wine with a rich and indulging perfume that shines with golden nuance and honeyed notes. The palate flows in unexpected ways - satiating and unrelenting; lively, yet smooth and rich. Exceptionally dynamic with a wide variety of foods, this is a wine possessing of flavor harmonies we have not encountered before, but are more than thrilled to have on our hands.
Drink now or cellar for 8-10 years. As for most of our wines, decanting is highly-
