A refreshing, light wine-like thing!
We press our fruit very gently and so are left with juicier grape pommace than most. We then add a bit of water to our pressed grape skins and ferment a second time, adding herb and botanical infusions sourced from our property — resulting in a spritzy, refreshing, wine-like beverage!
Water was pumped over top of pressed Riesling skins and stems. Fermented with punchdowns for 6 days before being pressed to tank. Lemon basil was added to the juice for 1 week. Bottled with a small addition of juice to create carbonation.
Strong lemon-basil aromatics with a hint of black licorice. The palate has a gentle spritz with lots of basil on the mid-palate.
