The Untamed Land: Einkorn
Untamed Land was brewed with locally-sourced floor malted barley and Canadian-grown Einkorn. This heritage grain was the first known wild grass to be domesticated and grown for food more than 10,000 years ago in the Fertile Crescent. Some scientists have gone so far as to suggest that it was actually fermentation and beer that resulted in humanity's move from wandering hunter-gatherers to farmers who remained in one place, tending to crops.
This beer was fermented with traditional Saison yeast, Brettanomyces and acid-producing bacteria in oak barrels for eight months. We blended our favourite barrels and lightly dry-hopped the beer at bottling with Quebec grown Nugget and Triple Perle hops for a lifted fresh aroma of lemon and pine. The beer was refermented in the bottle for another four months.
Untamed Land is our latest attempt to capture a true expression of our local terroir. The beer drinks with a rich, full body and a gentle touch of acidity. It features notes of vanilla, fresh cut wood while maintaining a vibrant, fresh fruit character.
