Sour cherry, raspberry, dried strawberry, green tomato and fresh tarragon with celery salt, black and pink peppercorns.
This wine comes from Jenkins Vineyard in Four Mile Creek. The thirteen-year-old vines are planted in clay and were harvested on the 27th of October. The grapes were partially destemmed (40%) before a three-day cold soak. The wine is then fermented for just shy of two weeks with minimal cap management (judicious pump-overs and punch-downs) before being pressed into concrete for a seven-month élevage. The wine is bottled unfined and unfiltered.
